Attempt # 2

​It's St. Patrick's Day and I'm making Mexican haha. 

Made a double batch this time. They still came out wonderful. I think next time I will make the dough closer to the time I make the empanadas. It's easier to work with. But everyone we have given them too has loved them. I really wish you could have tried them mom... It's a something I love to make in memory of you. 

Sue and Nicole didn't say anything when I shared the picture, but ... eh... I can't help them at this point.
